A culmination of Jay living all over, from Europe to Louisiana to New Mexico. This coupled with Brazilian roots and family in Boston afforded him an upbringing of blended traditions and cultures. Now residing in one of the travel capitals of the world and also one of the most diverse, Orlando, Florida. This is where Jay got into the culinary and hospitality field and gaining an appreciation of the process of making food from all cultures.
