The Smokin Burrito About 1 year ago my mother in law who has been in the food and catering industry for over 20 years decided she would like to begin heading towards retirement. At this time she had a food trailer and thought it would be time to put it up for sale. My wife mentioned this to me and the ideas began coming in. I have always loved BBQ food and Mexican food. I decided to design a menu around them both and create something new and different than other food choices out there. The portability of Mexican food with tacos and burrito’s paired well with putting BBQ on the inside that tends to be messy. To take this all one step further I decided to go with smoked meats as they are so tasty and very tender to just melt in your mouth. Before long the menu came to full light and I had the recipes figured out. What were we to name this? What would the food truck look like? Having a long line of military members including myself in the family I knew that it had to support our country and its military! Being in the US Navy myself as an intelligence specialist back in the 1990’s this was very much a huge inspiration for me. My grandfather has always been my hero and his era of military style was the pin up girl and older WWII airplane styles. I thought this would look amazing on a food truck and be very easy to maintain at the same time. So the name “The Smokin Burrito” soon followed to pair well with the Smoked BBQ foods and the pin up girl style. We have been slowly integrating full service catering right alongside our food truck and that has been steadily growing for us also. I have never formally trained as a chef. I have always been a home cook. I love making new creations and seeing the reactions of those that try them! As a child my parents called them “concoctions”
