Learn how to cook healthy – on a budget! This four-day cooking class is based on a cookbook called Good and Cheap: Eat Well on $4/day by Leanne Brown. The book was written as part of Ms. Brown’s PhD thesis and includes a variety of healthy (and delicious!) recipes that can be prepared for just $4 per day – the amount per day that a person receives if he/she qualifies for the Supplemental Nutrition Assistance Program (formerly Food Stamps).
Each session includes practical cooking instruction from Convivium chefs; exposure and hands-on experience preparing a variety of new real-food ingredients; as well as resources and tips on how to meal prep, navigate a grocery store, and eat healthy on a budget. (See each class’s itinerary below).
This class will consist of four sessions – two sessions each week, taking place on Sunday and Monday evenings, for two weeks. Participants must attend all four sessions. Kids ages 6-12 are welcome to join, free of charge, if accompanied by an adult. Kids 12-15 must also be accompanied by an adult and must register separately. Anyone 16+ can register and attend on their own.
CLASS OUTLINE:
Day 1 (Sunday, February 16, 5:30 - 7:30):
Meal Planning and Grocery Store tips/tricks. Food: Crispy Chickpeas and Pumpkin Seeds, Broccoli Apple Salad
Day 2 (Monday, February 17, 5:30 - 7:30):
Soup Stocks and Veggies. Food: Cold & Spicy Asian Noodles and Corn Soup.
Day 3 (Sunday, February 23, 5:30 - 7:30):
Healthy Proteins. Food: Half Veggie Burger & Quinoa Stuffed Peppers with Caramelized Banana Dessert.
Day 4 (Monday, February 24, 5:30 - 7:30):
Put it all together! Participants will use their knowledge from the past classes to put together an entire meal: Potato & Kale Rolls with Raita and Roti.
Finished meals will then be shared and enjoyed all together for a final celebration.
