Celebrate the start of salmon season with fresh recipes and brush up on essential techniques in this hands-on cooking class.

Students will learn to make these salmon-focused dishes:

  • Poached Salmon with Peas & Pasta
  • Braised Salmon in Mustard Sauce
  • Steamed Salmon Pot-au-Feu with Anchovy Butter
  • Sautéed Salmon Cakes

These recipes will expand your repertoire for entertaining on the weekends or cooking a healthy weeknight meal for the family. Chef Madelaine will also cover salmon varieties, as well as how to shop and store salmon at home.

Skills covered: selecting and purchasing salmon; techniques for cooking fish, including to poach, sauté, steam and braise; making cream sauce, butter sauce, and vinaigrettes from scratch; basic knife skills.


About the teacherMadelaine Bullwinkel has been teaching the culinary arts for over two decades. She also leads immersive culinary tours in various regions of France. The Chicago Tribune honored Madelaine with the Good Eating Award in 2001.
