Sending our first barrel-aged sour beer into the world is a special occasion, so we are pairing it with something special. Autumn Arch will release four of American Wild Ales at an exclusive event on January 29.
Calculated Deviation is a tribute to the unplanned nature of all sour beers. As much as we purposely brew for specific flavors, wild yeast adds a beautiful element of adventure and randomness. It's a Calculated Deviation from the dialed-in, methodical, and predictable brewing process of ales and lagers. Join us on January 29 and be the first to embrace the deviation.
Farmhouse Saison - This golden saison was patiently fermented with brettanomyces in an oak puncheon and then aged with a mixed yeast culture in red wine barrels. Tartness is subdued but is balanced by a crisp funkiness.
Apricot Sour - Lovingly fermented in stainless tanks and then transferred to barrels, this apricot sour saison rested for nine months on oak before it was re-fermented on loads of apricots to impart a rustic stone fruit character.
Peach Sour - Originally fermented in stainless, this tart farmhouse saison rested in oak wine barrels for nine months and then was delicately re-fermented with peaches, thereby adding a subtle yet pleasant fruit flavor to compliment the French/Belgian base beer.
Agave and Lime Zest Sour - This tropical fruit sour beer was fermented with agave nectar and lime zest. With a higher level of tartness, it brings a mild spiciness and funk that is balanced by the extremely interesting agave sweetness.
